Hello Summer!

Happy Meatless Monday!

It looks like summer may have finally arrived!

Hope everyone had a great weekend and got to spend some time with their amazing Dads!
Our family had a great day with our Dads and Grandpa’s! We chilled out on the boat and had a great dinner at my parents house over looking Lake Erie!  It was such a great day…the sun was out and the top on the VW was down!!!

Tristan and I took Matt to great little shop called Pick’n Sisters.  They have some really cool antiques and retro pieces.  Matt found a set of funky 70’s coffee tables that we bought him for fathers day.  He plans on putting them in his man cave…..aka the basement…aka the Band Room!

I’ve posted a link to a short story about a cow begging for its life before being slaughtered.  Thought it was appropriate since it is Meatless Monday.  Tonight for dinner we had rice and cheese quesadillas.

Rainy Days……….on my day off….

April showers bring May flowers and such but it also brought a much needed day of rest.
Once the kids were off to school and the car was at the mechanics I had nothing but time on my side.
Even though I have been trying really hard to be healthier I could not resist the call of 7-11 $1.00 Wed peppermint mocha and a box of KD.  I did use almond milk to mix my KD and added hemp hearts and nutritional yeast so that has to count for something!
I curled up on the couch in my ROOTS sweats and 3 movies in my hand and I did not move for the day.  My two dogs were happy to join me, and I chilled in my blissfulness until the kids came home from school…….at which point I gave them some rainy day suggestions.  My daughter Taya went off to Star Bucks with two friends and  since Star Bucks is nice and close to Sud Skates (an indoor skate park and shop in St. Catharines) Taya dropped of my son Tristan to go skateboarding for bit.  Perfect.
Now I just have to think about something to make for dinner.  This always seem to be the burning question….What to make for Dinner????
